This easy scrambled egg recipe is decadent for your next brunch. Elevate your scrambled eggs by making them creamy with crème fraiche and fragrant with lots of fresh herbs.
I usually make my scrambled eggs with a tablespoon or two of milk or heavy cream for a light and fluffy consistency. This recipe uses crème fraiche. Let me tell you that the flavor and creamy texture is awesome. You may not go back to making scrambled eggs any other way.
I started to create this recipe to celebrate Dr. Seuss' birthday. I work in schools so usually there are big celebrations that everyone gets involved in for this day. With schools being virtual and hybrid this year, the celebrations are definitely different.
Usually everyone is dressing in costumes of Dr. Seuss characters. We even have special giveaways in the school meals program. The entire school gets involved in celebrating this author.
These green eggs and ham are definitely good enough for adults to enjoy. I used all herbs to make my eggs green but if you want to sneak in some more veggies, try some sautéed spinach and kale or even arugula for a peppery kick.
The herbs I used in this recipe include:
Parsley
Marjoram
Basil
Thyme
Tarragon
Chives
This is a great recipe for making green eggs without using dyes to turn the eggs green. Nature has plenty to offer to do just the trick.
Creamy Herby Scrambled Eggs
Serves 2
Ingredients
5 eggs
1 Tbsp Creme Fraiche
1/2 Cup Fresh Mixed Herbs, chopped (See above for suggested herb mix)
Salt & Pepper
1 Tbsp Unsalted Butter
Steps
In a small bowl, add eggs, creme fraiche, and herbs. Season with salt and pepper. Whisk until well combined.
Melt butter in a nonstick pan. Once melted, add in egg mixture. Heat eggs while gently whisking constantly until eggs are set. Over low heat, it should only take about 5 minutes to cook. Enjoy!
