This must be the prettiest parfait I have ever seen!
This parfait is layered with a dragon fruit smoothie, chia pudding, and Greek style yogurt.
This parfait makes me happy for so many reasons. It's an easy recipe. It's quick to assemble. And it's so pretty. It's a great option to share with your children because the colors are so inviting. There's a hint of sweetness without it being overly sweet.

Dragon fruit flesh can be found in it's signature pink, white, or yellow. I look for that signature pink flesh dragon fruit often and it's harder to find in my area than the white and yellow flesh dragon fruits. The yellow flesh dragon fruit can be identified by looking at the yellow outside layer. But the pink and white flesh dragon fruit both have pink outside layers so be careful when picking out your dragon fruit if you are looking for a specific color. I've found that they both taste the same so it shouldn't affect the flavor if you grab the wrong one.

Frozen dragon fruit also known as pitaya can be found in the frozen fruit section now. This makes it much easier to try dragon fruit, and you can make this parfait as often as you like.
This parfait is good for breakfast, lunch, or a high protein snack. It's quick and easy to put together. In my house there's always some chia seeds and chia pudding around so this comes together really quickly.
Dragon Fruit Chia Parfait
Serves 2
Layers
Dragon Fruit Smoothie
Simple Chia Pudding
Greek-style Yogurt, Plain or Vanilla
Dragon Fruit Smoothie
1 Cup Pink Dragon fruit, frozen
1 Cup Strawberries, frozen
1 Banana, frozen
1/2 Cup Almond Milk
Combine all ingredients in a blender until smooth.
Simple Chia Pudding
1 Cup Almond Milk
1/4 Cup Chia Seeds
1 tsp Maple Syrup
1 tsp Vanilla extract
Combine all ingredients together in a small bowl using a whisk. Wait 15 minutes and whisk again. Let set overnight or at least 4 hours.
To make your parfait, layer the dragon fruit smoothie, chia pudding, and Greek yogurt in a clear bowl or cup so you can see all those pretty layers.
