Red, White, & Blueberry Fruit Salad

This is the only fruit salad recipe you need. It's refreshing. It's fast. It's easy to make. Prep fruit, make dressing, mix together. Done. The colors are bold and bright and festive for your American holiday celebrations.   • Watermelon

  • Cherries

  • Blueberries

Dragon fruit can be an intimidating fruit because it looks unusual. But it's so much easier than you think. I specifically looked for white flesh dragon fruit for this festive red, white, and blue fruit salad.


This fruit salad is bright and refreshing. The salad dressing in only 3 ingredients: honey, fresh lime juice, and mint. It's great when there's a show-stopping dish that takes very little effort.


This salad is great to bring to a potluck or to prep ahead for your meal prep for the week. I'm always happy when I open my lunch and see color that's not too much brown or white. I do a little dance in my seat.



Best Ever Red, White, and Blueberry Fruit Salad

Serves 10


Ingredients

1 Pint of Strawberries, Stems removed, Cut into Quarters

1 Pint of Blueberries

1 Personal Sized Seedless Watermelon, Cut into cubes

2 Cups Cherries, Seeds removed, cut in half

1 Dragon fruit, diced (click here on how to prep dragon fruit)


Dressing Ingredients

1/4 Cup Fresh Lime Juice (About 1 1/2 limes)

1/4 Cup Honey

5 - 6 Leaves of Fresh Mint, Cut into small strips


Steps

1. Mix prepped fruit into a large bowl.

2. Whisk dressing ingredients in a small bowl until well combined.

3. Pour dressing over the fruit and stir carefully until all fruit is coated in the dressing.

4. Salad can be served immediately or can be refrigerated for 2 - 4 hours for the flavors to marry. Enjoy!
