Roasted Garlic Mashed Potatoes

Mashed potatoes is one of those comforting dishes. It's familiar and simple. When done right it's like getting a big hug. Adding in roasted garlic elevates mashed potatoes to bring richer flavor. You can use them for a special dinner even if that special dinner is a weeknight meal. You can have this wonderful side dish on the table in no time.

I have to admit that I don't eat mashed potatoes often but when I do I have to make it from scratch to make sure it's as homey as it can be.

A pound of potatoes can make 4 - 6 servings and that's about 3 large potatoes. If you have some smaller potatoes, you may need 4 potatoes. To increase the servings of this recipe, increase the potatoes and increase your heads of garlic for every additional pound of potatoes.

After boiling the potatoes, drain them and put them back into the same pot. Add in some warm milk and melted butter. Season generously with salt and pepper. Add your most delicious ingredient of roasted garlic. Mash potatoes with a traditional masher or with an electric mixer for an even creamier consistency.


Roasted Garlic Mashed Potatoes

Serves 4 - 6


Ingredients

1 lb Russet potatoes

1 Head of Roasted Garlic (Find recipe here)

1/2 Cup Heavy Cream (Add in more if needed, 1 Tbsp at a time)

3 Tbsp Butter, Unsalted

Salt & Pepper, to taste


Steps

  1. Peel and cut potatoes into uniform chunks. Add potatoes, cups of water and a generous amount of salt to a boil in a large pot.

  2. Boil potatoes until tender. Drain potatoes and add back to hot pot. Turn heat to medium low and heat potatoes for 1 - 2 minutes to dry them out. While potatoes are drying, heat cream and melt butter.

  3. Add warmed cream and melted butter to the potatoes. Mash with a hand masher and add in roasted garlic. Mash and mix until you achieve your desired consistency. For a creamier texture, mix in stand mixer.

  4. Season generously with salt and pepper. Add additional cream 1 Tbsp at a time if necessary to reach desired consistency.

  5. To make ahead, boil potatoes and dry them. Refrigerate until ready to use. Reheat potatoes on the stove and start with step 3 to finish recipe. Enjoy anytime.
