Slow Cooker Spinach & Artichoke Dip

A good dip is a great way to start a meal or to have on a menu for a party. This is the easiest spinach and artichoke dip I've ever made. All you have to do is dump all the ingredients into a slow cooker and let it warm and melt together. It's a crowd pleaser. It makes a lot so it's great for a potluck and especially when you're pressed for time. Serve with some tortilla chips or a nice crusty bread. You've got to dish that your guests will come back to again and again.



I needed this recipe for a work potluck. It was a super busy week and needed something easy to transport and didn't take a lot of time. Spinach and artichoke dip is usually a crowd pleaser and a hit for party. It was great for me to pull this recipe out of my hat. What made me continue to use it again and again is that my coworkers really loved it. I made sure that the recipe was extra cheesy.


Now this recipe is definitely not low fat. There are 3 different kinds of cheese including cream cheese, mozzarella cheese and Parmesan cheese. Oh yeah, and there's also a full stick of butter. I know! I told you it wasn't low fat. And I've tried different amounts of butter but you really do need the full stick in order to keep the cheese in a delicious creamy texture. So if you're following a #keto diet this is a #ketofriendly recipe that you can use again and again. You can spread it over some chicken breast, stuff it into an omelet or simply use it as a dip. It makes up the keto diet profile even if you're following strict keto.


I use marinated artichokes to make this dip which brings some more flavor to the dip without bringing in a lot of effort. Who doesn't like maximum results with little effort? I know I do. It's called working smarter not harder.


One important step to not rush through is draining all the liquid from the spinach. The recipe calls for frozen chopped spinach that's been thawed out. This spinach holds a lot of water. It's important to squeeze out all the water. If you don't squeeze out the water or squeeze out enough water, you'll end up with a watery and runny dip. You want a thick dip. You want the strings of cheese to pull up and away from the dip when you dip your tortilla chip. This is one #partydip that you'll repeat over and over.



Slow Cooker Spinach and Artichoke Dip

Serves A Whole Lotta People


Ingredients

8 oz Cream Cheese

16 oz Sour Cream

1/2 Cup Butter

1 Tbsp Garlic, minced

10 oz Frozen chopped spinach, thawed and excess liquid drained

14 oz Marinated Artichoke Hearts, chopped

4 oz Canned diced chilies, drained

1 1/2 Cup Parmesan cheese, shredded

1 Cup Mozzerella cheese, shredded


Steps

1. Combine all ingredients into a small slow cooker. Cook on low for approximately 40 minutes until all ingredients have melted together. Stir about every 10 minutes or so to make sure everything incorporates evenly. Enjoy with tortilla chips or bread!
